Not a big fan of salmon? You can easily switch up this recipe by replacing the salmon with chicken or shrimp.

Ingredients

18 egg whites

4 egg yolks

8-10 oz smoked salmon (chicken or shrimp)

Portobello mushrooms, finely chopped for flavor (optional) can choose any veggie

1 cups fresh spinach, finely chopped

½ Tsp. Dill weed (fresh or dried) 

3 Basil leaves (fresh) 

Salt and pepper (for taste) 

6 oz Goat cheese

 

 Single Serving

3 egg whites 

1 full egg with yolk

4 oz Protein (smoked salmon, shrimp, chicken) 

Handful of spinach 

Dash of dill weed 

2 oz Goat cheese 

How To Prepare

Beat eggs until smooth. Cut salmon into small pieces and add to egg mixture. Add Portobello mushrooms, spinach and seasonings. Mix together. Spray and 8×8 glass casserole dish with olive oil. Pour egg mixture into pan and sprinkle evenly with goat cheese. Pour ¼ cup water over the middle of the dish to steam the eggs. Sprinkle seasoning.  Bake at 400° for 20-25 minutes or until set. Cool and then cut into 6-8 pieces.

Option: replace the goats cheese with some avocado.
